What’s for Dinner Tonight?

It was beautiful here today so we grilled. DH had ribeye, I had a tuna steak with corn (farm stand), and roasted potatoes (garden). I also made brownies for dessert.

Garden breakdown is full on. We got a pretty good tomato harvest for end of season. I’ll need to harvest peppers before the possible frost next week.

Everything people have made for the past few days sounds so good. I'm almost ashamed to admit that all I did today was boil a bunch of eggs for egg salad sandwiches.
 
We had family lunch today, so dinner is whatever we can find.
There is leftover pizza soup from last night and a little bit of lunch meat and cheese from lunch, a couple hard boiled eggs and some Indian flatbread type thing that the neighbors brought over,
 
@BlueStarryHat I'm sorry to learn you were so sick, but glad you are on the mend. I wish I had some of your egg salad tonight! We spent about 10 hours working on DD's new house today, so everyone is just beat. DD, SIL, and the resident 8 year old had pasta with meat sauce from earlier in the week, DH had leftover pik pow with peanuts from our dinner out last night, and I had a half-serving of hot and sour soup left from lunch on Wednesday. We're going back for another round of house work tomorrow; no clue what lunch or supper will be. We are just all so tired by the end of the day that nobody wants to cook and mess up the kitchen!
 
My niece's 4th birthday family party. There was salad, chicken piccata, penne al la vodka, veggies, and italian bread. I need to come up with a game plan for Tuesday and Wednesday at my parents' house. TBD after DH and I grocery shop tomorrow.
 
Tonight everyone wants fried chicken cutlets, so I'll make them and probably get some good autumnal veggies to roast in garlic parmesan olive oil. I don't often do fried foods anymore, but cutlets in the air fryer just don't have the same flavor as when I fry them in some oil.
 
I tried something new tonight. We had slow cooker honey garlic chicken. It was just ok I thought it was kind of bland. I served it with broccoli and rice.
 
DH is sick and has been all night. We are going to see if he can tolerate some chicken and rice soup. I'm going to eat some tortellini and make extra to take for lunch tomorrow assuming we are going to work. We work together and have one car and I'm not allowed to drive right now because I have had a a couple of unexplained seizures in 2 years.
 
I finished the Niçoise salad tonight after adding more green beans and marinated artichoke hearts. Would have been nice to add a potato but gotta keep those carb levels down.

@NYCgrrl, I think you meant BlueStarryHat, who made the egg salad, which I love by the way. I finally learned how to soft boil an egg and the yokes for egg salad come out so much creamier and softer than when I hard boil them. 🥰

There are a few dishes I still need to make ahead for our vac and believe it or not the freezer is stuffed to the gills. So I’m aiming for the dishes that take up the most space right now.
Today it was meatless lasagna and a green salad.
