What’s for Dinner Tonight?

Put the defrosted chicken thighs in marinade this morning but too late to start cooking early afternoon.

Houston, we have a problem.
 

Spring minestrone soup with pancetta, asparagus and pesto added. I could eat this forever and if smarter would have made a bigger pot. Oh well not difficult to make fresh and it’s not like I have to wash the pots.
 
Busy day and despite taking meat and prepped food out of the freezer yesterday, I just wasn’t in the mood and decided an omelette would satisfy.
Filled it with ratatouille and Muenster cheese, made a green salad to serve on the side and dinner is done.

I’ll probably have some strawberry sorbet for dessert.
:lovestruc I feel like if anybody, anywhere, would have some ratatouille just sitting around waiting to become omelette filling, it would be you. I'm in awe. :teeth:

Here tonight it was a tray of store-bought frozen cheese cannelloni thrown in the oven, some garlic bread and salad out of a bag. Elevated to respectability by a tomato I grew in a pot on my terrace. :laughing:

Our weekly meal subscription box arrives tomorrow, and obviously not a moment too soon. ;)
 
BBQ chicken quarters and some salmon on the grill and various sides that I'm unsure of. I'm responsible for the chicken. The rest of the group is bringing sides. I'm throwing a little BBQ dinner as a thanks for the people that helped me with installing new fencing at the animal shelter.
 
Quiche. Somehow SIL and I got our wires crossed a few weeks ago and we ended up with eggs... SO many eggs. We still have about 3 dozen in the fridge, so tonight I will make quiche. I'm thinking chicken with onion, mushrooms, and swiss, with salad on the side. I am also going to try making a small quiche using Just Egg as DD can't eat regular eggs. We'll see how it goes.

ETA... It's been determined that the JustEgg quiche is a work in progress. It didn't seem to bake evenly, so parts are barely cooked and parts are spongy and overdone. DD says it's not deluxe but she can work with it for next time. We also wonder if mushrooms were not the best choice, even though I cooked them first to get some moisture out. Fall-back supper is Kraft dinner and frozen broccoli. Better luck next time, I guess.

Beef with polenta. I love a good polenta. I make it with milk instead of water, and then add a small amount of maple syrup like they used to do at Le Cellier.
