It's the Victoria Day long weekend here; kick-off to our summer, even if the weather isn't quite ready to cooperate. We'll be having our first BBQ of the season - strip loins (what we call your New York cut) and baked potatoes.
We're having family lunch again today.....kids coming to help us move furniture back in place after getting all the windows replaced.
Taco and Taquito lunch.
Dinner will be leftovers from that or more of the Quesadilla casserole.
DS chose again & wanted grilled steak & baked potatoes. DH picked up T-bones. I'm looking forward to trying them. It's been decades, since we had a T-bone steak. I'm adding sautéed green beans.
We went out for date night to a local restaurant. DH had pasta pomodoro with grilled chicken and veggies, and I had in-house breaded fried scallops with macaroni and cheese as a side. I could only eat 3 scallops and about 1/3c of the mac, but man, was it good!
Last night, BIL tracked down some old friends and hung out in Manhattan, so I made myself some black pepper shrimp stir fried with leftover veggies and cabbage slivers; amazes me how long a cabbage head can last in a solo home!
Tonight, it’s stuffed turkey meatballs (ricotta in the center), some spicy tomato sauce and I’ll figure out what kind of pasta substitute eventually.

Last night was a Mexican themed team dinner. Basically takeout beef and chicken fajitas with all the veggies with rice, beans, chips, salsa and guacamole. Very good. Tonight will probably be fast food on the road or maybe takeout at home, but we are looking at 10 pm or later arrival.
Tonight I will make chicken marsala and DD will make mashed potatoes, from scratch. This is a big deal; all 4 of us work long hours, so when we have mashed potatoes, they are usually instant. Not tonight!
