What’s for Dinner Tonight?

This week has not gone as planned. Tonight was supposed to be grilled cheese and soup but because of the snow on Tuesday my dairy delivery won’t come until tomorrow and that delivery will have the bread, cheese, and soup. Regrouped with ravioli and salad.
 

easy and quick tonight-bake some lightly breaded frozen chicken breasts (costco bare brand), costco chicken fried rice on the side (and pull from the panda express sauce packets in the spice drawer for people's dipping pleasure ::yes:: ).

some Gyros from a somewhat local Greek place
i know it's nowhere as good as from a greek restaurant but have you tried the gyro meat from costco? they are selling the gyro kits in the meat department but they also sell frozen gyro meat in bags (2 individual bags per packet). i keep them in the freezer along with some pitas and then grab tzatziki (trader joes makes a good one).

man, my oldest has been asking me to make mousaka for weeks but the eggplants in the local stores are small and pathetic looking yet they want close to $5 for them:crazy2: said, 'nope, gonna have to wait till summer eggplant is out'.

My only option is SamsClub for those types of stores. I'd have to drive about 3 hours round trip to shop at Costco. Trust me, I wouldn't mind trying it, but the travel just doesn't make sense. I appreciate the info though. If I ever do get to shop there it will be on my list.
 
Last night was another free for all. I have wfh for 4 years now, but I had to go in for the last 2 days for GIANT in person meetings...like 1000 people plus meetings. And I was SPENT. Too much socializing and stimulation for my introverted brain.

So, kid had tuna salad with the leftover noodles from the chicken salad.
Husband ate chili from Sunday, garlic bread from Monday, rest of the chicken salad
I had 3 mini low carb tortillas with a tablespoon of refried black beans on each. White cheddar, cilantro, fresh jalapeno. Then some more pesto-soaked green beans on the side.

Tonight we are meeting some friends at a Mexican place "up north", at a halfway point between our houses.
 
Bought some small cauliflower pizza crusts. Going to make veggie pizza tonight. Pineapple-jalapeño-black olive-mushroom for Hubby. Spinach-mushroom-black olive for me.
 
Dang...I just pulled out of the freezer a package of the delicious organic ground beef to make burgers. Even have brioche buns, red onions and big tomatoes. Yum. Then remembered it's Friday and it's Lent, so back in the freezer goes the beef. It'll be cod from the freezer.
Hey, hold the phone! As I type I'm thinking battered cod sandwiches with all those good things on hand.

Hmmm dunno what to make. I got a PT job because I was going nuts from being “retired” and now work on Fridays. I’m off at 5, so that’s kind of late to figure out dinner. What to do…
 
My dairy delivery that was delayed because of snow earlier this week ( they were a day behind) brought my order this morning. tonight will be grilled cheese and soup. The dairy delivered all the things. Bread from a bread place, cheese from the winner of the best cheese in the US (local place that won this year) and I’m trying broccoli cheddar soup from another bakery. (haven’t tried their soups before) The dairy partners with a bunch of local places and offers a great assortment of items. I love that I can support so many local places and they make it so easy.
 
Eating the last of the shrimp pad Thai tonight. Almost feel like eating it cold but well I can’t stand in front of the fridge while scoffing it down so I might as well heat it up, lol.

Dug around in the freezer earlier today and found some lemon sorbet. It’s mine, all mine and I don’t have to share it with anyone. Muah haha!

Yay! :banana: My meal subscription box for the week was delivered yesterday! Last night we had honey garlic turkey noodle bowls and tonight it was seared pork cutlets with mashed potatoes, shallot gravy and an apple salad. I just freakin' love this service. I order the pre-prepped ones and don't even have to deal with the vegetables - everything including the little measures of spices and condiments are ready to roll.

i get it-we are a 2 hours round trip from costco (don't count time on surface streets or in the parking lot :crazy2: ). for the short time they were doing frozen food mail order i was loving it. now i make a trip every 2-3 of months and stock up. i know they upcharge for it but have you checked to see if the costco instacart option is available to you? depending on what you are buying it can be worth it.

:thumbsup2 i pulled out the last container of christmas pies. dh got the lemon creme while i enjoyed the pecan (love sorbet-best thing for acidy stomach).
 
tonight was one last round of fridge leftovers supplemented with a couple of frozen pizzas. tomorrow is enough pork chops to last through sunday. monday my oldest comes over and is going to teach me how to make stuffed meatballs (gonna make a good sized amount to freeze), i'll teach oldest how to make meatloaf (again gonna freeze a bunch).
