What’s for Dinner Tonight?

I should add that tonight (Valentine's Day) we are having Breakfast for Supper. The resident 7yo has been sick for 2 days now (temp over 102 yesterday, 100 today, all congested and worn out) so it's his choice to go ahead with the plan. We'll have french toast cut with the heart-shaped cookie cutter, and bulk breakfast sausage, smashed out flat and cut with the heart shaped cutter before cooking. We'll also do some scrambled eggs and strawberry juicy-smoothies (no dairy- kid's too congested). He's pretty bummed as yesterday was "100's Day" at school and today was Valentine's parties- and he missed both days. I just hope none of the rest of us get sick (because sick little kids like to snuggle...)
 
Last night we had a valentine's dinner date at the local zoo - they have a conservatory there that is incredible! (Anyone in the Twin CIties - Conservatory at Como). They spaced tables for 2 out through the entire place, had live music (flutes/violins), and it was incredible. We sat in "The Palm Dome" - literally under palm trees, next to a fountain. It was PERFECT!

Dinner started with a salad of arugula, pomegranates, blue cheese, pears, spiced pecans, and a ginger vinaigrette. With whipped honey butter/dinner roll.

DH had a sirloin cap with beet demi, sauteed shrimp and veggies, and purple mashed potatoes. I had the veg entree which was purple potatoes, sauteed veg, risotto, and portabella wellington.

And dessert was an individual beurre noisette cake with apple compote, caramel sauce, whip cream. And I had a big cup of coffee with it.

Incredible evening!!!

Still figuring out dinner for tonight. Have to make a Target run, so might pick up something there
 

My aunt is roasting a chicken right now (it smells incredible,) and I'm going to pop some veggies into the oven while the chicken is resting later. Will roast Brussels sprouts, broccoli and cherry tomatoes with some feta in garlic oil with grated Parmesan and lemon juice. I have a bottled balsamic glaze to drizzle over the top.
 
Tonight ended up being leftover roast and mashed potatoes for him.

Me, I made a giant taco salad and then threw the last of the green beans into a scorching hot pan and got them crispy, topped with some parsley pesto and some Parm. So good!

Took some frozen manicotti with Bolognese sauce out of the freezer and finished off the head of Boston lettuce by making it into a green salad with capers and lemon vinaigrette. Finished the last of the opened Champagne with the bottle stopper making me smile. It has a stainless steel Mickey Mouse head and the man bought it for us at the shop at France in EPCOT; good memories.

Making shrimp Pad Thai for tonight. Sent my home attendant to a market in Manhattan to buy the rice noodles, candied ginger and bean sprouts so I prepped the string beans and carrots in the meantime. The ginger is for a dessert I’ll be making next weekend but better to have all the ingredients on hand.

It turned out great! I cannot eat nightshades, which includes potatoes so the yucca is a great swap. Its a lot starchier than potatoes so when mashed its a bit stickier but the flavor is great, especially when you add the butter, garlic and milk to them. When cutting the yucca you have to quarter it and then cut a triangle off the center as they have root strings down the middle. The outer skin is hard so you need a chef knife to pare it off.
 
I'm gonna grab some Saganaki, Hummus with bread and some Gyros from a somewhat local Greek place. I don't get to go there often, but I have an appointment close by so I always grab something from there when I am close enough. I might grab extras too because they always have wonderful specials that I love to explore.
