Gingersnaps (Low Fat)

2 cups flour
2 teaspoons baking soda
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon ginger
1 cup brown sugar
1/4 cup egg substitute
1/2 cup dark molasses
3 tablespoons light margarine
2 tablespoons orange juice
Preheat oven to 350 degrees.
Spray cookie sheet with non-stick spray.
Sift dry ingredients.
Cream margarine and brown sugar.
Beat in eggs, molasses and orange juice.
Blend in sifted dry ingredients.
Shape rounded teaspoonfuls into balls, and roll in sugar.
Place 2" apart on cookie sheet.
Place in oven for 10 minutes, or until cookies flatten.
Remove cookies from sheet while hot.

Snickerdoodles (Low Fat)

2 tablespoons low fat margarine
2 tablespoons fat free margarine
3/4 cup sugar
3/4 cup brown sugar
1 tablespoon vanilla
1/4 cup egg substitute
2 1/4 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 cup sugar
2 teaspoons cinnamon
Preheat oven to 325 degrees.
Lightly spray cookie sheets with nonstick cooking spray.
In a large bowl, combine margarines, 3/4 cup sugar, brown sugar, vanilla and egg substitute. Blend until smooth and creamy.
Add flour, baking powder and baking soda. Mix until blended.
Refrigerate dough 1-2 hours.
In a small bowl, combine 1 cup sugar and cinnamon.
Form dough into 1" balls, and roll in cinnamon/sugar mixture.
Place on cookie sheets and flatten slightly.
Bake for 15 minutes.
