I'm late, but Happy Birthday!!!! Sounds like some very nice "gifts" from the boys - an interrupted shower and a nap. Ahhhhh!
We haven't done the CR yet, but it's on the list for someday, I would love to see that aquarium in person...plus, built in kiddo entertainment.

There will never be enough time to do everything in Disney, but that's the fun of it.

Happy belated birthday!! 
I am loving the idea of KOTS and surprising Nemo - that will be priceless! I also like MRYPPNS's idea of how to tell him. My son's also 3 and can't read, but he definitely recognizes the word Disney! I've also taught him to call Cinderella's castle "Mommy's castle" so whenever he sees it in a commercial or start of a Disney movie, he says, "look! It's mommy's castle!"

Boy, oh boy. There's SO much that phrase could be applied to in my adult life. Heck, even in my childhood.
I don't want to, but I know I have to add something on to all my ADRs.
And that's an allergy.
Let me back up.
I'm breastfeeding the baby, and super excited to be doing so. Honestly. Last time around with Nemo, we had a lot of issues, and I could never get him to nurse, so I ended up pumping exclusively for nine months. All I can think about while I'm writing this is how this is more than Tim probably ever wanted to know. But there you go, Tim!
Anyway, Nemo had a sensitivity to a protein in milk. Not lactose, but a protein called casein. Which meant that I couldn't consume anything with milk in it. So no diary, but also, no processed foods that contain milk. And for those of you who think that's not so bad, let me tell you how many things have milk in them.
Honestly, I think this is one of the things that helps me lose my post-pregnancy weight before I even start exercising, the fact that I'm so limited in regard to food / junk food.
Well, right around eight - nine months, Nemo grew out of that allergy, or sensitivity, so to speak, and he was able to have a formula that contained casein.
Why am I telling you all this?
Squirt has the same allergy. And since it entails a very gassy, unhappy, spit-uppy baby if I don't pay attention to what I eat, here we go again with the milk-free, dairy-free diet.
In all honesty, the older I've gotten, I've developed a lactose intolerance. So in reality, I shouldn't be having any of these things anyway, although yogurt (probably because of the cultures) never seemed to bother me, and I do miss it.
So, I've hesitated on it, because Squirt will be around seven - eight months when we go (and if he's like Nemo, potentially over the allergy by then), but I think I'm going to have to go ahead and add the milk/dairy allergy to all our reservations.
I need to acknowledge that it's not just for him, it's my own digestive tract that suffers, and really who needs two cranky babies on vacation.
It's just hard, because we look at all these online menus and think of things we'd like to eat, and it's going to be totally different for me. And I know that many chefs at the Disney restaurants are amazing when it comes to allergies, and that they'll even prepare special things, so that's heartening.
But just to give you and idea of how all-encompassing this allergy is, I'll give you a list of some of the things I have to avoid that might not think of.
Bread. A lot of bread, hamburger buns, hot dog buns, etc, contain milk.
French fries. Sweet potato fries.
Any dessert that has milk or butter in it.
We're knocking out a lot of my favorite Disney foods here. For those of you who don't know, I have a love affair going on with Casey's hot dogs, french fries, and I may or may not enjoy slathering said fries in that cheese sauce. Maybe if I'm lucky it's artificial.
Fortunately for me, I read that the Dole Whip is non-dairy, eh?
So, to those of you who have had to deal with allergies before, isn't there a special number or email that you can contact to request info about the quick service restaurants? I thought I'd read that somewhere.

Oh Kat, that just stinks about the milk allergy at Disney. I never even thought of it effecting things like french fries. I've been noticing myself as I get older that dairy effects me a bit too, although my issue seems primarily concerned with cheese.

Actually, Nana pointed out to me that she knew a girl when she was young who had to drink goat's milk, and it was because she was allergic to cow's milk, and some people do better with goat's.
So I'm thinking later, when Squirt isn't so little, I might try a goat's milk cheese and see how I do with that.
Because I LOVE cheese. I miss it. And french fries. But mostly what I miss is dessert.

Luckily, I'm a dad and I had to deal with pumping when our DD was a baby. So I know where you are coming from.
A few years ago my SIL went to Disney- she is highly allergic to gluten. I think Disney either sent her a list of food that was safe or to a special website before she left. While she was at each restaurant, the chef came out and listened to her concerns. She said it was reassuring that they cared and really took care of cooking her food with no contamination. She was very impressed with the way it was handled because many restaurants don't understand gluten allergies(though now it is becoming more common)
I think at CS my SIL asked to speak to a manager. The manager had a book with all the different allergies and what was safe to eat. I think your best bet is just to call and to speak to someone.

Yes m'dear.....Dole Whips are dairy free! Eat as many as you want.
One note about adding the allergy thing to your ADRs. It can take a while for a chef to come to your table to speak to you. I only put my tree nut allergy on one ADR because I don't want to waste the time it might take for the chef to see me.
Liam has problems with the milk protein but thankfully it's not so bad that is has to be out of his diet 100%. We just don't give him milk to drink and limit his cheese intake.

Disney makes handling an allergy so easy. The chefs are very accomodating. Just another reason why WDW is such a great place!
