Weird deluxe dining plan question

Does Disney limit the amount of dinner dining credits? For instance, if I were to buy a one night package (2 park day parkhopper) (can I do this?) and buy the deluxe dining plan with it. I understand that I can use the package as soon as I check in, and the credits expire by midnight I checkout. So can I have a dinner (which is worth the most of all meals) on both nights?

-With any dining plan you can use the credits any way you choose, within the time frame (from check-in till midnight on the day you check out). So you could have all 3 meals in a 2-hour time frame or spread out any which way over the 2 days. We always maximize our credits with any dining plan.

-And you can buy any park ticket with a package- our next trip at the end of the summer is a 3-way split stay between Art of animation for 4 nts with an 8-day ticket, Beach Club Villas, and Saratoga Springs.

We always maximize our dining credits on split stays or tri-split stays by getting the deluxe plan for one of the portions and using it to include a couple signatures or dinner shows.

This will be our 5th trip to Disney and Universal. Only this year, since Disney seems to keep rising prices on EVERYTHING, we are only going to each locations for 2 days each and renting a very nice ocean front beach house for a week instead of staying at AKL. (plus it is way more plusher and over 2000 square feet on the ocean) With the price of a very deluxe beach house being so much cheaper than AKL, we are going to drive to 1 1/2 hours to Disney (pay for Pop C ) one night with 2 day tickets and the deluxe dining plan midway through the week. The dining plan isn't worth it for longer stays really but I thought while getting our Disney fix and being in the park nearly 2 full days (one night stay), we can use the 1 credit dinner meals both nights, eat like pigs and have an early lunch or breakfast on one of the other days.
Plus use the snacks at Goofy Candy shop and take our snacks to the beach house when we check out. We have never been to the ocean before and we are excited to add this to our trip this year. We were only going to do a beach stay for 2 nights, when I saw the rates for a week stay and it got me thinking of why I wanted to pay almost twice as much for AKL?

We love Disney, but it is getting so expensive and with my kids being teens now, they are looking something new.
