Week of Thanksgiving - Parks or Character Dining

DW and I are deciding on the itinerary for the first week of our trip later this year. We understand the parks tend to be very busy that week and someone suggested to us to do some of our character dining that week in the parks and do our rides, etc. the following week (the week we normally go). We have AP's so getting into the parks is not a problem.

Would you all agree/disagree with this approach?
