Wedding Mints

Does anyone have a recipe for wedding mints? I don't want the melted white or dark chocolate one. What I am looking for is the sugar mints made with either cream cheese or butter??? Or any good recipe. My son is getting married in a few weeks and I would like to make the mints.

no, can't say that I have... I just did a search for you. They sound like they would be good, though. Maybe you can do a 1/2 recipe as a test batch?

I believe the recipezaar ones have reviews on them...

Here's my tried and true recipe.

Mints

3 ounces cream cheese
1/2 tsp mint flavoring
2 1/2 c powdered sugar
Food coloring--a drop or two goes a long way (may need a little more powdered sugar if you add too much)

Mix ingredients together.
Knead by hand until stiff like pie dough.
Be sure to get color worked through the dough if you add food coloring.
Make small balls and roll in granulated sugar.
Put in mold and even off the bottom.

When set, remove from mold and dry on wax paper.
Freeze between layers of wax paper if you won't be using within a few days.

Be sure to get the right molds. They are rubbery, not the hard plastic.

Thanks for posting this. Do you use mint extract or oil? Where do you get it?
 
I use wilton oil flavorings. You can buy then at any "super' store or at www.wilton.com


If you use paste food colors, it won't affect the amount of powered sugar needed, and you can get deeper, true-er colors.

I make the buttercreme mints.



1/2 cup whipping cream (room temp)
1/2 cup butter or margarine (room temp)
1 1/2 pounds of powered sugar (approx) *Amount of powered sugar varies on humidity levels and temps when making the mints.
4-6 drops of peppermint oil



mix all together, until consistency of playdough.

Press into rubber molds. These can be immediately 'popped' out, and placed on plates. They will be semi-soft, and develop a 'crust' as they sit and are exposed to air. Store in the refrigerator, let them come to room temperature , uncovered, before serving.

This recipe will make approximately 200 mints.
Dough will keep, stored in the refrigerator, covered for 4-6 weeks.
