WDW wedding cakes

Sorry, this is OT, but I didn't know where to post it. :blush: My niece wants to have a wedding cake made of different cheesecakes. I love the look of WDW's wedding cakes. The smooth finish makes for beautiful decorating. Does anyone know what they put on top of their cakes to make them so smooth? Also, does it add to the flavor of the cake? We're looking for something to make decorating easier, but not take away from the taste of the cheesecakes. Thanks :)
 
Just plain old buttercream. Delicious, buttery, with a hint of vanilla buttercream. MMMmmmmmmmm
I got married there and had a great cake! WE loved it so much we order a mini one each time we go now (with buttercream as the filling since it is sooooooo good)
 
4orm-could you please tell me how to order a mini cake? We will be there for our anniversary and I normally order our cake topper every year to celebrate. Since we'll be in WDW I didn't know how to go about doing this since I can't very well bring mine on the plane!! :0) It may be different than our normal cake topper, but it will be magical!!

Some of the cakes with the really smooth "frosting" is probably fondant. This tastes terrible but looks great. Dh and I had cheesecake for our wedding (not at Disney) and it was so yummy!

What type of icing was on your cake? She wants to have a variety, so it needs to be an icing that will work with different flavors.

CLick on th elink in my sig and you can see our 6 inch cake I ordered for our anniversary this past weekend, July 30th. I ordered it from the Grand Floridian bakery. Don't have the number on me. Just call 1-407-WDW-DINE and ask to be transferred or ask for the main number for the Grand and then have them connect you to the bakery. The cake you see in our link was white cake with buttercreme icing. In between the layers was white chocolate mousse and fresh raspberries. It was sooooo good!! And so beautiful as you can see. I know you're gonna ask, so I'll just tell you, it was $40 minus our 20% savings from Disney Dining Experience. Love that card!!!

And yes, there is a solid white chocolate M&M Bride & groom on top with "gum paste" roses that were beautiful. The banner on front was made out of white chocolate that is like tootsie roll, that they flatten out and use. We spoke to a GF Chef the next day and she told us how they made it.

I didn't do icing. The decorated it a bit with cheesecake that was shaped into flowers and I think a couple buttercream flowers, but that's it. All cheesecake!

ETA: We actually had different flavored cheescakes. The main cake was plain, and then we had smaller cakes in the back that they cut up for gugests (chocolate chip, irish cream and rasberry swirl.) Going back home this weekend and might need to stop at the bakery and grab a piece!!
 
The mini wedding cakes are tiny, but filling - $25 from the Grand Floridian bakery. We ordered it and had them deliver it to our tea. You can also get them at the Boardwalk bakery.

I have a question...can you just go into the Grand Floridian Bakery and order one or do you have to do it ahead of time? I'm thinking about possibly doing a cake for my DH and me on our trip next month...we'll be celebrating our birthdays and anniversay while we're there! (my bday Aug 31, his is Sept 7, and our anniversary is Sept 10)

I decorate cakes and I know that there are many techniques to get your buttercream icing super smooth. I'm not very experienced with cheesecake though. For a good website full of tips and tricks and advice, try www.cakecentral.com . I'm sure someone there will be able to help you!
 
I haven't seen a picture but if it is what I think it is, it's called 'rolled fondant'. It's made of 10x sugar, gelatin, glycerin, corn syrup and a few other things. It doesn't taste great, so it is peeled off the cake before cutting and serving. It is usually used over more dense cakes like pound or fruit cake. It makes a good surface for very intricate designs.

(I was a cake decorator in a former life before I had kids. I like the SAHM thing better.)
 
Does the GF bakery deliver cakes to restaurants? Or to the rooms?
We're going on our very belated honeymoon in Oct and I would love to have a cake as a surprise for DH
 
I had fondant on my wedding cake...my sister made it and put buttercream UNDER the fondant so it didn't taste nasty. I was afraid I wouldn't like it, but it was pretty good.

But like someone has already mentioned, there are techniques you can use to make your buttercream look just as smooth...

They will deliver to your room IF you are staying at the GF and they only deliver to the restaurants in the GF. You can however pick up the cake and transport it to the restaurant of your choice. They normally dont deliever it but if you are staying on the concierge level I would contact them and they can arrange it.

You can order the mini cakes for 25 each by calling the Gf and being transfered to the bakery. They have little ones with a white chocolate cinderella's castle on top. I order those for our trip in sept. They also have the cindys slippers that are white chocolate. They can also recreate the top tier of your wedding cake if you contact them and send them a picture or they can make a totally new top tier for you. They can do anything and they are amazing. I ordered a 6 inch top tier that was yellow cake , dark chocolate mousse, buttercream frosting and then fondant on teh top to make it smooth. It will then have a pattern of mickeys going around it and in the mickeys will be hidden donalds and minnies. I was quoted $45 and they will be delivering to our dinner at Narcoossee's.

Oh this is great info Skylarr29!! I do have photos of my topper and we are eating at Narcoossee's as well so that should work out great! I just need a simple chocolate cake with choclate buttercream frosting. Sounds like they can make just that!! Thank you!
 
In order to get buttercream very smooth you have to :

1) Get rid of all crumbs and put on a thin layer of icing. Refridgerate for about 10 minutes.

2) When you take it out put on frosting using a spatula (one that is long and completely flat is good). Start on the top of the cake and spead it around to the edges. When you get to the edge start to work your way down the sides.

3) Continue until the cake is covered.

4) For the smooth finish: Run a bit of very HOT water from the faucet. Heat up the spatula ( steel works best) and run over the top of the cake. It kinda seal the deal!!! Continue doing the sides. Finish decorating as you wish.

HAVE FUN!!!!!
 
I have also found that if you let the icing form a "crust" you can take a piece of parchment paper, lay it over the top of the cake, and smooth it out that way. But the icing really has to have that crust on it, otherwise the parchment paper will pull it away from the cake.
 
We had fondant on our wedding cake, and I actually prefer the taste of it because it's not as sweet. But our baker did put a layer of buttercream under it for anyone that wanted to peel it back - but I didn't see many people doing that.

We were not married at Disney, though, but I know they do similar things on their cakes.
 
You guys are great! :) Thanks for all the advice. We'll have to try both options to see which works best. They live in a very small town with no good bakeries, so this will be something my sister & I have to do on our own. We'll do a lot of practicing, before the big day. I'm sure my DH & DS will be sick of cheesecake by then. :p I had one other idea, & would like opinions on it. I was thinking of somehow doing a white chocolate shell on top of the cheesecakes. I'm not sure how to do it though. :blush: I'm thinking it would add a hint of the choc. flavor, but not enough to detract from the taste of the cheesecake. What do you think about that idea? Thanks again :)

I just wanted to add that I found a recipe for chocolate glaze on cakecentral.com. (great site :) ) Would it work to replace the bittersweet choc. with white choc?
