We just returned from 2 1/2 weeks in Orlando and here's some of the most usefull things if you are traveling with a 7 month old.
1. Maya wrap!!! I bought the wrap after the recommendations on this board and it was the best thing. Temps were low to mid 90's entire trip and I can't imagine using my Baby Bjorn in such heat. The Wrap was perfect to carry, nurse, cover DD from the blazing sun, cover the stroller when DD was sleeping, blanket, etc.....best baby product we had with us.
2. Cooler bag. Must to carry water and juice for the kids. We froze water the night before to help keep them cold during the day. We didn't buy juice till couple of days later but should have gotten it earlier. The high heat and humidity was taking a toll on our DS8 and one day he had mild case of heat stroke.....Powerade and juice really helped.
3. Your own stroller with a large canopy. I cannot tell you how many babies and toddlers I saw with sunburned faces and arms sitting in strollers with no canopy. We brought our own larger stroller that fully reclines from home. A bit bulky but worked well at the parks...baby could rest laying down and stroller didn't tip over with the bags we had hanging on it.
4. Sunscreen
5. Water mister or fan. We had the water mister and everyone used it to help them cool down.
That's all I can remember right now.
