Does anyone know if I can bring a case of water onto the ship?

Pre Covid, I have seen that happen, so my guess is yes! You carry on.

Yes, the YOU carry it on bit is very important. It is not allowed to be checked.

Will the porters offer to tag it as checked? Yes. Anything for a tip.
Have people done it? Again, yes.

BUT if that water bursts - which it very easily could as they don't stack luggage neatly by weight when loading it into the ship - YOU will be the one held responsible for other people's things that your water damages. And given that there would be a tag with your room number on it, it's VERY easy for them to trace.
