Was Disney Food always such a sodium-fest?

Yes! This has always been the case. I would say mostly for QS.

The way I look at it, is that it's a good way to replenish salt from all the sweating (I only go in summer).
 
If you are worried about the amount of salt in your food then talk to the chef at the restaurant. Disney chefs are extremely accommodating with special requests. Even at the CS places (it helps if you don't go at peak times). Just ask for your food to be prepared with less or no salt and then you can add it to taste. There are certain things that come already seasoned and can't be helped but the chef can make suggestions to try and accommodate your wants and needs. Cheers!!!!
 
I haven't noticed the food being any saltier there than any other restaurant anywhere else. Most restaurants use a lot of salt to boost the flavor of the foods. It can also be to make you thurstier and increase drink sales.
 

I don't think it's more than any other restaurant anywhere else. The food tastes good to me. But after a few days I do notice the bloat and my feet tend to me a bit puffier so I know I'm eating a lot of sodium.
