Hi friends,

I grew up having pop and fresh cinnamon rolls w/icing and a glass of OJ for breakfast Christmas morning. I want to make something heartier and /or healthier. Maybe real homemade cinnamon rolls (less chemicals than canned?), a breakfast casserole of some sort, or something else that doesn't hve lots of prep time while we open our stockings.

I'd love to hear your ideas, recipes, traditions, or thoughts on this. PS I'm not a great cook/baker, but can follow recipes and enjoy baking and cooking when I do.

Thanks! :thumbsup2

You can do a search for the Disney Main Street bakery French Toast Loaf. I believe I got the recipe off of a thread years ago. You could also just google it.

I only did it once, but it was prepare the night before and then bake the next morning. Not healthy but very tasty and a great Christmas morning meal. You just need to make sure it cooks all the way through. Mine did not so the middle was soggy. I need to make it again.

Hi!

Try the Trader Joes Cinnamon rolls in the pop open can--they dont have all the chemicals.

Or--you can soak steel cut oats in your slow cooker or rice cooker overnight and set them to cook as soon as you wake up--

Or here is an easy-peasy breakfast cassarole recipe:

10 cups white bread cubes
1 (8 ounce) package cream cheese, softened
8 eggs
1 1/2 cups milk
2/3 cup half-and-half
1/2 cup maple syrup
1/2 teaspoon vanilla extract
2 tablespoons confectioners' sugar
Directions

Place bread cubes in a lightly greased 9x13 inch baking pan.
In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk, half and half, maple syrup, and vanilla until mixture is smooth. Pour cream cheese mixture over the bread; cover, and refrigerate overnight.
The next morning, remove souffle from refrigerator, and let stand at room temperature for 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
Bake, uncovered, for 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Sprinkle with confectioners' sugar, and serve warm.

If you slip the casserole out of the fridge, turn on the oven and then go get washed up, it comes about about right.

Merry Christmas!

Cathy

Wow, that sounds delicious!

These are time-consuming but soooo good!

Indredients for Rolls
1/2 C warm water
2 pkg dry yeast
2 Tbsp sugar
1 pkg vanilla instant pudding (and enough milk per pkg instructions)
1 1/2 C melted butter, divided
2 eggs
1 tsp salt
8 C flour
2 C brown sugar
6 Tbsp cinnamon

Directions
In small bowl combine water, yeast, and sugar. Stir until well dissolved. Set aside.

In large bowl, prepare pudding according to package directions. Add 1/2 C butter, eggs, and salt. Mix well. Add yeast mixture. Blend. Gradually add flour and knead until smooth. Place in a very large greased bown. Cover and let rise until doubled.

Punch down and let rise again.

Roll out on lightly floured surface to 34x21 inches in size. Spread 1 C melted butter over surface.

In small bowl, mix brown sugar and cinnamon. Sprinkle over the melted butter.

Roll up very tightly. With a knife, make a notch every 2 inches. Place a piece of string, thread, or unflavored/unwaxed dental floss under the roll and crisscross over each notch to make clean cuts.

Place on greased baking sheet, 2 inches apart. Lightly press down each roll by hand. Cover and let rise until doubled.

Bake at 350º for 15 to 20 minutes, until golden brown. Do not overbake.

Frost warm rolls with the following:

Ingredients for Icing
8 oz softened cream cheese
1/2 C melted butter
1 tsp vanilla
3 C powdered sugar
About 1 Tbsp milk (just enough to fluff)

Directions for Icing
Combine all ingredients and mix until smooth.

Oh wow! Such good recipes and ideas. My mouth is just watering reading this thread. I think I'll try the marmalade ones for a change.

Thanks!

This was on Pioneer Woman's Tasty Kitchen today, sounds really good and pretty easy. Totally healthy, I doubt it!

Honeybun Cake

* Prep Time 15 Minutes
* Cook Time 50 Minutes
* Difficulty Easy

Ingredients

* 1 box (18.25 Oz. Box) Yellow Cake Mix
* 4 whole Eggs
* 1 cup Sour Cream
* ¾ cups Vegetable Oil
* 1 cup Light Brown Sugar
* 2 teaspoons Cinnamon
* 2 cups Powdered Sugar
* 6 Tablespoons Milk
* 1 teaspoon Vanilla Extract

Preparation Instructions

Preheat your oven to 325 degrees.

By hand, blend the cake mix, eggs, sour cream, and oil until well-incorporated. The mixture will be pale yellow; it’s okay if it has some lumps! Then set aside.

In a separate bowl, mix together the brown sugar and cinnamon until well-blended; set aside.

Pour half of the cake batter into a greased 13×9 pan, spreading the batter out into a thin layer. Add half of the swirl mixture to the top, covering the entire layer of batter. Don’t be alarmed if it looks like you’re over-saturating the cake—it’ll taste great! Pour the rest of the batter on top, and spread the batter until the cake is even. Top the cake off with the rest of the swirl mixture. With a knife, swirl the batter until you create a beautiful masterpiece (I always pretend I’m a barista pouring cream into a cappuccino because I’m really nerdy like that).

Place the cake into the oven and bake for 45-50 minutes, or until an inserted toothpick comes out clean.

While the cake is baking, make the glaze. In a bowl, mix the powdered sugar, milk, and vanilla until glaze is of desired consistency. When the cake comes out of the oven, immediately pour glaze onto the hot cake. You might have to pick up the cake and tilt it to spread the glaze evenly. Let the cake sit for a few minutes so the glaze can set and serve warm or at room temperature.

You can make it the day before and put in the refrigerator and then just pop it in the oven on Christmas morning. It is absolutely wonderful. In fact I may make that this year instead of our usual premade cinnamon rolls!

I also love the cinnamon rolls from Costco so maybe I will go with those.

Not cinnamon but very easy and tasty

2 ingredient muffins -

mix one box cake mix (I've used checolate or spice) and one 15 oz can of pumpkin. mix them together. No other ingredients. The batter will be thick like a brownie mix. WHen I use the spice cake I add about 3/4 t of pumpkin pie spice. Spoon into muffin papers and bake at 400 degrees for 20 minutes. Makes 12. The best part 3.5 grams of fat and 181 calories each.

You can't taste the pumpkin if you use a chocolate cake but they muffins are light and moist.

Try I think the brand is Rhodes Frozen Cinnamon rolls very easy.

Yep, these are the ones I use, too. I use the quick-rise method, because I never remember to start them far enough in advance, and they come out great. I leave them unfrosted, then have anyone who likes frosting add their own.

You can do it but you will regret it. Traditions are traditions and any change to that will just not be the same, even if what you have is better.

I understand the health issue but we are talking one day a year here. At that rate, if you live long enough to have any specific thing effect your health you will be very, very, very old.

As long as your goal is to create a new tradition you should be alright, but if it is just to substitute a traditional item, it will be a major let down.

We have "Monkey Bread" Christmas morning-it is a make the night before deal and SUPER easy.

1 cup brown sugar, packed
2 small packages (or one large if you can find one) butterscotch cook and serve pudding
1 stick of butter
26 Rhodes brand frozen rolls

Liberally grease a bundt pan (I use cooking spray)
put frozen rolls in pan
sprinkle brown sugar and pudding over the rolls (dry)
cut stick of butter into pats and place around the rolls

put in oven covered with a towel overnight-do NOT turn on the oven

In the morning, REMOVE towel, keep rolls in oven, turn oven on to 350, bake for 30 minutes. When done, invert bundt pan on large plate to remove rolls, serve.

If you want to get really fancy you can melt the butter and brown sugar together and then pour over frozen rolls the night before.

I usually put a cookie sheet under the bundt pan while cooking to catch any spills. The rolls thaw and raise over night.

These are the Rhodes rolls I use so if you don't have that brand near you you can find something similar:

I am soooooooooooooo making the monkey bread rolls. I am going to run out today to get everythig so I can do a "test" batch before x-mas!!!! Yeah a test batch, have to make sure they are good right????:rotfl:

For the casserole, I make one with 12 slices of bread, 1 lb of sausage, eggs (6 I think) and lots of cheese. You just put the bread in a casserole with the sausage on top, mix up the egss and milk (like scrambled) and pour over and then put cheese on top. Let it sit over night and then bake in the morning. Really good and a hearty casserole to do us until dinner (sometimes we are up before daylight and doing breakfast depending on how we need to plan things around other families).

The one thing I cannot forget is the gingerbread. Its just the mix made into a cake, served warm with whipped cream; but everyone LOVES it. I think that is the one that is really our tradition for Christmas morning.
