Gosh, I'm sure the pangs of missing her will be there, but I think you two will still enjoy being without a stroller in the parks. Got DD? Book yourself a fancy-schmancy dinner and ENJOY! For example: DH and I booked a late dinner at the French restaurant in EPCOT and the waiter was kind enough to place us next to the window so we could enjoy the nighttime show outside. VERY romantic.
Hold hands as you stroll around together. Get a someone or Photopass photogs to snap some good photos of you both. Do this often. Wander into Downtown Disney at night. Catch the Circ show there, perhaps?
Most of all, enjoy being together as a couple!! The parental side will thank you for it later.
