Visiting the land in January

Hi all, Looking for some advice. We're making our second trip with DS who will be 6. We're staying off property Jan 18-25. Last trip (3 yrs ago) was around the same time period and crowds were fairly light. We had no problem walking into restaurants and being seated. Just wondering if our experience will be the same. Should I be safe and make ressies?

Also, what days are the best for which parks? Just want to do the best planning possible.
