Visiting other resorts for dinner

If we are staying at a resort and want to drive to another resort for dinner and we have friends staying at that resort, will our parking pass work at that parking lot?

Say: We are staying at a POP resort:
Our friends are staying at: Contemporary

Can we drive to contemporary have dinner and do a pirates and pals cruise from there will our parking permit work at that lot? The same for other Disney resorts?

You have 3 hours to park at another resort while dining there. After that you're at a hypothetical risk of being towed.

We parked at a few other resorts while there in May and never had any issues.

You can certainly drive there and have dinner, but you cannot leave your car there indefinitely and go to a park or do something else. As the pp said, you will have a time limit of 3 hours, at which time you run the risk of having your car towed. Your parking pass will have the name of your resort on it, which is good at that resort only for unlimited parking time.
