Via Napoli - smoky crust?

I know VN has wood-fired ovens, and while I generally enjoy pizza cooked that way, I've also eaten at restaurants where the pizza crust gets rather burnt and ashy tasting. (Not sure if that makes sense.)

My party has a few...discerning...palates who don't appreciate that "flavor," so I was wondering just how much of a "wood-fired" taste the pizza has.

It probably depends on who's making it. I've had wood fired pizza at the same places that have been more done and charred than others. As I recall, the pizza we had at Via Napoli had some black and crispy spots around the crust but I would not say it was burnt or overdone. It was very good. You could probably ask them to take it out early but no guarantees it would be to your party's liking.
 
We have been there several times and always had charred areas of the crust that had a bit of a "smokie" taste. I would not have considered it burned at all. If you have them take it out early it very well may be soggy in the center.
I enjoy it very much but if you have some who don't like that flavor it may not be something that they will like.
 

Their pizza is great, certainly the best at WDW. But, it is a wood fired crust(which I love). There are other entrees available for people who may not like that charred taste. The pasta does not have that flavor(in my opinion). It is a great restaurant, my family's only must do each trip. Good luck!
 
Via Napoli is a must do each trip for my family. The food is phenominal....easily one of my fave restaurants in Disney. This was my pizza in October. Let me tell you, it was OUTSTANDING. They don't burn the entire pizza...it may literally only be a few spots that are charred around the end/crust. But if your family is really concerned about it, I'd order something else. Its true that asking them to remove the pizza from the oven earlier might result in soggy centre. Not very tasty that way IMO.

We didn't care for the pizza here in part because of that smokey burnt flavor. I don't dislike wood fired pizza in general, but it isn't my favorite. It was too strong of a flavor for me at VN though (combined with a crust that was too thin and got soggy).
 
The thin crusts holds up better when a light hand is used with the toppings. I think a bunch of cheese, with it's associated fat/oil when heated, can wreak havoc with a thin and crispy style. That's excluding operator error, of course. No doubt that can happen, as well!

I just love the place and it's the one non-negotiable eatery I have. Luckily my family loves it.

For the OP, it's definitely "fired". I think it may be too much if your party is sensitive. They have other dishes, as noted previously.
