Vegetarians - Virtual Meal Plan Swap Meet

Great thread! :thumbsup2 I'm a vegetarian with a rather bizarre diet (I'm allergic to all nuts and soy), so I'm always looking for new recipes! :goodvibes

Here's a great black bean chili recipe I highly recommend, which I got from this blog:

* 4 teaspoons olive oil
* 1 medium onion, chopped
* 4 garlic cloves, minced
* 2 teaspoons ground cumin
* 1 can (4 1/2 ounces) chopped green chiles
* 2 cans (15 ounces each) black beans, drained and rinsed
* 2 cans (14 1/2 ounces each) diced tomatoes
* Salt
* 1 package (10 ounces) frozen corn
 
That's pretty much the receipe we used for the chili we had for dinner Sunday night.
 
Just wondering, do folks here wear vegan shoes or are you still wearing leather? I'm having trouble finding non-leather shoes with closed toes that fit the "business casual" dress code at work (no crocs). Due to my weird feet, I really need shoes that are open in the back (slides) or have a slingback, not completely closed shoes. I'm looking for something I can wear with casual skirts/dresses.

I get a lot of my shoes at Payless. They label their leather shoes very clearly.
 

ok, the Sunshine Burgers got 2 thumbs way DOWN in my house. No one liked them :(

I saw these at my local natural store as well. I didn't get any, frankly just too many fats and calories (mostly good fats) but still way too many.

We are doing most of our bread-related meals with whole wheat wraps now. I would like to find a whole grain pasta too, but so far can't find any I like. Any recommendations?


We actually eat pasta made with chickpea flour...I think it's Rotini. Not sure if it's Vegan but it's really yummy and none of the issues that whole wheat pasta has.

I gave leather up a long time ago and it's been difficult. I agree with Payless (although they are made in China :headache: ) and Mooshoes.com

Payless!! I forgot about them, they do sell a lot of plastic shoes. :goodvibes I will definitely check out their selection.


Re: Mooshoes etc., I'm so picky and hard to fit (painful feet, plantar fasciitis, etc.), I need to be able to try on shoes or return them easily. Although Zappos is a little pricey, free shipping and free returns make up for the prices, so I ordered 3 pairs of shoes from them. Couldn't find any decent vegetarian mules or slingbacks, so I bought a pair of sandals for around town and two pairs of shoes that look like I could wear them with casual summer dresses and skirts at work (have to wear closed-toe shoes at work).Here's what I picked out, hopefully one or the other of the closed-toed shoes will be acceptable:

If I manage to get something for free (found object, gift, prize, etc) that is made of leather and that I can't return, I will generally use it. This has resulted in two pairs of shoes that I won as a prize from a shoe store, so I do have some "nonvegan" shoes.

I've found though that there are a LOT of shoes that are not made from leather or suede out there.

What did they substitute the ground meat with? That's one of my favorite things to eat while at Disney. Last time we were there and pre-vegetarian days, they didn't have it on the dinner menu, but the server said I could order it and they'd make it up for me. It was sooo yummy. Comfort food at its best.

It had mushrooms at the bottom that were cooked in some nice spices and some peas, corn, and spinach. It had mashed potatoes on the top and cheddar cheese. It was yummy!

Looks like roasted veggies (eggplant, zucchini, mushrooms, asparagus, onions, and garlic scapes), on pita, tonight.
 
We had a new Chinese restaurant open up here that is strictly vegetarian. We had lunch there today and it was so yummy!

Question for those Trader Joe fans. DH has to go away for 2 weeks on business. He will be staying in an Extended Stay hotel with a stove, refrigerator and microwave. He will only be four miles from TJ. :banana: Unfortunately, we moved 5 years ago to a state without TJ and I have forgotten what we used to buy.

He will make up his steel cut oatmeal and have that for breakfast each morning along with some fruit. Lunch will be provided at his training seminar. He wants some quick, healthy veggie meals from TJ. He can always do pasta and a salad or tortillas and refried beans but he wanted to grab some things from their freezer. I think they used to have a tasty frozen brown rice and tofu dish but that may have been Whole Foods. Any suggestions?
 
Just olive oil and a little salt.

(Do note that the scapes are like putting in garlic and basil... they've very flavorful.)
 
We're making roasted szechuan sweet potatoes and an asparagus recipe DH found in the latest issue of EatingWell magazine. I just put the sweet potatoes in the oven.

Trader Joes has some excellent veggie enchiladas! They are absolutely delicious and taste much like the (more expensive) veggie burritos they offer, but with a tasty enchilada sauce on top :) Tell him to give those a try.
For a treat their whole fruit bars (I prefer the lime kind) are excellent and their dark chocolate cherry soy cream is good too!
