Vegetarians, I Need a Soup Recipe that Carnivores Will Enjoy.

Too late for Christmas Eve now, but this is our favorite!
Dan’s Cream of Red Pepper Soup (Christmas favorite!)
4 chopped roasted red peppers
2 tbsp butter
1 chopped onion
4 or so cloves of garlic
Rosemary sprigs, to taste (I like a lot!)
5 c vegetable stock
3 tbsp tomato puree
½ c heavy cream
Paprika, salt, black pepper

In stock pot, melt butter. Sauté onion, garlic, and red peppers. Add veggie stock. Bring to a boil. Add tomato paste and rosemary. Simmer for 15 minutes. Remove rosemary. Put in a blender and blend until smooth. Add heavy cream and swirl. Serve immediately, with good bread and cheese.
Add a bunch of roasted tomatoes to this and you've also got a winner. It's almost identical to the recipe I used to do up all the tomatoes from my very prolific patio plant this summer. Perfect with grilled cheese! :goodvibes
 
One of our teen daughters is a vegetarian, so we always have a meat and non-meat version of chili and soup. I often make ours in the crock pot and hers in a mini crock pot, splitting ingredients. I will then add plant based ‘meat’ crumbles to hers if desired. Our go to:

- chili
- chicken tortilla soup
- vegetable soup
- lasagna soup
 
For a soup, how about a creamy tomato basil or a hearty vegetable soup? Both are delicious and filling for vegetarians and non-vegetarians alike. For another appetizer, consider stuffed mushrooms or a veggie platter with hummus. Here you can find some more recipes and workout tips.
