I have been to WDW twice as a vegetarian (I've been converted to the dark side and I'm now a meat-eater) and I found it very easy to find vegetarian meals. San Angel Inn has a vegetarian menu with several items on it. I remember Mama Melrose had a few options too, although I don't remember what I ate now but I do know it was good.
I know this isn't on your list, but my favorite meal ever as a vegetarian was at 50's PTC. At the time the only veggie option was a stuffed pepper which did not sound appealing to me. So I asked if they could do something else and they made me a huge plate of many different side items. My sister was with us and she is a vegetarian too so they made us both plates and customized it to our tastes. For example I love mushrooms and she doesn't so they put a mushroom dish on my plate and not hers. The mushrooms were wonderful, btw.
I think your DD should be fine although she might have to try something new every now and then.
