Vegetarian recommendations?

Does anyone have any recommendations for which restaurants have particularly good vegetarian options? Any restaurants to avoid?

subbing--I'm also interested in which counter service locations in the theme parks are vegetarian-friendly!

You'll find lots of good suggestions if you search the boards.

Boma and Jiko, both at the Animal Kingdom Lodge, are a vegetarian's dream.

For counter service, I have had good luck with Tangerine Cafe in Morocco at Epcot.
