My gf is a vegetarian and we did find plenty of quick-service options around the resort when we visited June 3-8, especially at lunch. The only real problems came at dinner time. Many of the quick locations in Parc Disneyland close early which severely limited the variety available to a vegetarian. After 5PM or so your options are pretty much salad and cheese pizza.
Some of her favorites were the veggie burger at Cascadeurs in the Studios, the Pizza 3 frommages at Colonel Hathi's, and the Caprise sandwich at Earl of Sandwich. Next visit we will definitely make some sit-down or buffet reservations for a little more variety.
