Vegetarian camping meals?

Okay,,I gotta nother question bout veggie people,,
Do they eat eggs ??

Usually. Vegans don't, but they don't eat cheese either. Eggs are a superfood. everyone should eat eggs.


Ammendment to my previous post:

I said Boca sausage crumbles, but they are actually Morning Star brand. Boca may have the same kind of thing, but I don't know for sure. My daughter saw me post that earlier and then asked if we could have it for dinner. Very simple to make, but all my kids tonight thanked me repeatedly for the yummy dinner!
 
My 12yo son has decided to become a vegetarian.

First off, please, if you want to discuss pros/cons of vegetarianism, could we do it on another thread? :flower3: He's just entering the tween/teen "find out who I am" thing, and I'm planning on supporting his explorations, the same way I was there for him when he put one foot in front of the other and learn to walk when he was a toddler.

Okay, so he's testing out vegetarianism. We love to camp. We love to stick hunks of meat on forks and roast them over the fire. See the conflict? So I guess I have a two-fold question:

1) What kind of things would be a good sit-around-the-campfire replacement food that's vegetarian? We've found those Boca Burger things (he calls them Bogus Burgers but has no prob eating them), but are there also some kind of faux hot dogs or something? :confused3

2) If you've got any easy, throw-together veggie meals that he could eat when the rest of us are throwing together deli sandwiches or something out of the crockpot, I'd really be grateful.

I was a vegetarian years ago (until I met hubby), but I actually love veggies, while kiddo has a limited veggie vocabulary, LOL.

I can't really help much on the vegetarian end, but portabello mushrooms make great hamburger substitutes and are sort of meaty and firm if fried and might even work on the stick over a campfire.

Beans as a main course such as pinto, black, navy if you have time to cook them with cornbread can be a very good high fiber meal. Well made vegetarian refried bean burritos are also a good alternative say to when everyone else is having something like hot dogs, etc.

I know that's only two suggestions, but I'm sort of dumb when it comes to being a vegetarian since I like to chase my meat off the plate when it tries to escape :lmao:

We're meat eaters too, but I love a "portabello burger" or portabella anything for that matter. We eat beans once a week and they are so easy to throw in the crock pot, which is a great thing while camping or at home!

Also wanted to mention regarding the vegetables on the grill, I buy the foil sheets at Sam's and they are already cut to size and you just pull them out individually. It's a convenience thing more than anything, but we love those things!
 
...hubby and the kids had gone out to eat. Apparently all my son could find on the menu was some big stuffed pepper thing and a potato-filled something or other (not clear on the details...it was a Mexican restaurant).

Chile cheese relleno?? Generally a poblano pepper stuffed with cheese and deep fried. Damned fine food even for a die hard meat eater. :thumbsup2

Oh, Judy, I'm the pie iron queen! I LOVE using those things. ...I've been brainstorming some non-meat pie iron ideas. I like the peanut butter and banana idea -- yum! Good call.

Excellent suggestion! You can even marinate them and cook them just like a hunk of meat. Slap 'em on a bun with some cheese, lettuce and tomato.... Yummm. :upsidedow
 
I also just thought of like a baked potato topped with broccoli (no BUSH bashing allowed:rotfl2: ... I like broccoli :cool1:) and cheese or some of your favorite veggies. Bake it split it in half spred it out and put the veggies and toppings such as cheese, or even salsa on it and that's a meal in and of itself.

We love and try and have pinto beans (but we add salt pork so it's not vegetarian) and cook the heck out of it about every week or two. When done put some jalapeno pepper sauce in them and eat with some hunks of red onion and cornbread with or w/o jelly. YUM ... YUM. They also make a great lunch heated up a day or two later.

I was thinking potatoes as well for cooking, can fill them with lots of good options (including onion for flavor) and wrap them in foil, sound pretty good. How about a stuffed apple (cinnamon and sugar) on a stick over the fire?

Not to get too far off track, but I saw an article recently (maybe Fox news or CNN health section) where they tried taking a group of people who ate pretty much the same diet, put part of the group on "organic" or "hormone free" meat products of the same type and quantity as the control group who stayed on typical meat that we all get in the supermarket. The ones on the hormone free meat diet lost an average of 15 pounds with no change in activity level or dieting. Seems worth exploring, the guy was claiming that seemed obvious, whatever they use to fatten up the animal for market seemed to carry over to the consumer!
 
Quick potato tip - if you don't want to wait FOREVER for a full baked potato (delicious on the file/coals but S-L-O-W), poke it with a fork and give it a few minutes in the microwave first (assuming you have one handy). For added flavor and a delicious crispy skin, smear the outside with olive oil and sprinkle with a little salt. :cool1:
 
Gosh, I love meat, but after reading all of this makes me want to become a vegetarian. (At least until the next time we grill steaks.;))

No kidding! Every time I come back to this thread I get really really really hungry!

I have a folder file I keep in the truck with camping stuff -- maps, campground brochures, camping grub ideas -- and these suggestions are going right in there. Just made some reservations at the state campgrounds and I'm itching to try these out! Y'all have been so helpful.

We were just in Charleston, SC, and had some absolutely mind-boggling shrimp and grits for breakfast. They came with two poached eggs on top. You won't find me saying anything about supposedly weird combos -- those were AMAZING and I'd make the drive back down just to eat that again!
 
When I was a kid we'd go ice fishing with my dad. We'd arrive at the crack of dawn and setup all the holes (kids were in charge of baiting the hooks) and then dad would either fire up the camp stove or start a campfire. Many mornings it was fresh caught perch and eggs for breakfast. Yummmmmm!

I've been a vegetarian now for over 5 months, and this will be my first summer going camping. I'm not fan of "fake" meats, so I'm not sure if I would even try the fake hot dogs or not.

I'm going to have to get me one of those pie irons, I could probably cook a veggie burger in it. I prefer Amy's or Sunshine burgers. I like the kinds that are made with whole organic ingredients like veggies, nuts , beans and whole grains. Nothing artificial, chemicals, etc.

Portabello's defintely make great grilling items. You could even skewer up some veggies, mushrooms, and even add some tofu for a little protein.
