I'm interested in the answer to this question, too. DH and I will be dining at V&As for the first time in November, and I'm not sure whether to do the wine pairing, or simply to order a bottle of wine.
It is 1 for each course, which is generally 6-7 courses. It is worth it!! If you drink about a glass of water with each course as well it won't hurt as much in the morning
We have never found the wine pairings in the dining room too difficult to handle, however our chef's table experiences, well there is a bit more wine involved there, but still not more than most people can handle.
What you can do is try having the wine pairing for one and splitting it. If you do not find it is enough for two people you can order wine by the glass for some of the courses which will match the pairing.
