Using a discount two days after program ends?

Hopefully someone can help me here!

My daughter's professional internship is supposed to end in June. We had made plans almost 2 years ago to be at Disney this June, and have our DVC reservation starting 2 days after she ends her program (booked before we even knew she was applying for the internship!).

We had planned on buying the dining plan, but my daughter was telling me that sometimes she gets discounts on the dining plan. If the discount was available when we are there, would she be able to book the dining plan ahead of time, while she is still in the internship, but would be finished with it before we are there for our trip?

And what of the the other discounts, such as food or merchandise? Does it all end immediately when she is finished? Or is there a period of time where it is still available if she chose to stay at Disney waiting for us to arrive for our planned trip?

I'm pretty sure that if she books it while she's still there it will still count. But I'm not 100% sure.

Discounted dining packages is not available for Member Points stays, even if the travel party is a Cast Member. Cast Member resort reservations with the Disney Dining Plan is only available as a promotional select-date offer that must be booked in conjunction with a Cast Member or Other Guest Bedroom discounted room. If available with dining packages, this is announced a few months ahead of the day of arrival.

On the note of discounts, whatever the "Valid thru" date on the Cast ID reads is the last day the Cast Member benefits can be used. The following day, no discounts, admissions or any other benefits are active. For discounted resort-rooms, a valid and active Cast Member ID must be shown within ten days of arrival (no sooner) or the reservation and any components on it may be reverted to rack/retail rate.
