How crowded will these parks be from May 12-19, and which days are the least busy? Any idea? We will have 3 days out of that week to be there, but we haven't decided which days.

The earlier the better. It will be less crowded on the 12th than the 19th as some schools will be getting out around the 19th. Saturdays are usually pretty busy so I would avoid that day if possible.

Tuesdays, Wednesdays and Thursdays are usually pretty empty. As you get closer to the weekend (Fridays and Mondays) it's a little more crowded because more people take long weekends. Of course, weekends are generally the most crowded.
