I'd suggest either the new Marriott Lakeshore Reserve or Hilton Parc Soleil timeshare resorts as upscale resorts but, of course, upscale can be a matter of relativity (upscale compared with what?). These are probably the two most upscale, and amongst the newest, timeshare resorts in Orlando.
It's about 2.5 miles to SeaWorld and 6.5 miles to Universal from Parc Soleil and about 2.5 miles to SeaWorld and 8.5 miles to Universal from Lakeshore Reserve.
Wyndham Bonnett Creek is about 8 miles from SeaWorld and around 12 miles from Universal. From what I've seen, Wyndham Bonnett Creek is a nice resort but I'd consider it more upper middle end than upscale within the timeshare world. Admittedly I have a Marriott bias (I'm not an owner, just like Marriotts better than most other timeshare resorts) but I think that both Cypress Harbour and Grande Vista, in the general SeaWorld neighborhood, would be considered more upscale than WBC. I'd also think that you might consider the two older Hiltons - HGVC at SeaWorld International and HGVC International Drive - or the Sheraton Vistana Villages resorts as upscale options.
I don't know that any of these offer
travel insurance (it's offered through timeshare exchange companies) but you should be able to find an insurer online that would sell it to you. Just be careful that you understand the coverage as you might not be getting exactly what you want (sickness causing trip cancellation would probably be covered by most insurance offerings but I doubt that a flight delay would be covered unless the delay was for at least a day - but then I'm just speculating on what common coverage you might find).
