Upgrading 2 day passes to 7 days...

Unless things have changed, you are going to want to use them one day first. This locks in the current value of the ticket as what they are worth. If you don't use them, then you only get credit for what the ticket reseller paid for them which could be a lot less.

If you bought them from a reseller, or from Disney prior to the last price increase, then the above poster is correct - you'll want to use them first.
If, however, you bought them directly from Disney at the current prices, it won't make any difference in cost if you upgrade them now or if you choose to do so after you enter a park.

I guess I am not sure of the price difference (I bought the tix from Disney in Sept 2012). But would it be worth it so I can take advantage of FP+ for 7 days rather than 2? We are going in January.

If I researched it right, a 2 day base ticket purchased in 2012 cost $176. The current price is $184. So - if you upgrade to a 7 day ticket now, you will pay $8 more for each upgraded ticket than if you wait until after you use one day. (These prices do not include tax.)
