I would personally be suspicious of a screen shot. I'm not sure how Disney does things. But, the process of adding a ecard to a physical card takes a minute or less. I do it for my DVC dues every January.
I don't bother with the physical card for DVC dues. I just copy and paste the eGC number to the DVC dues payment page, which as you say takes a minute or less.
You may want to call the disney gift card number to make sure that the invalid cards were actually activated. I've had that problem with cards ordered online from bestbuy and sam's.
Last year I had a problem with BJs. Major pain in the butt to get fixed.
To answer your question - yes, a screenshot will work. I forgot to load a $50 on to a physical card and we were at the parks. I actually made it my lock screen picture on my iPhone because it would be easier to find after all the Disney pictures I was going to take. No issues at all using it.I bought some Disney e-gift cards from Target (with my RC discount, of course!). If I take a screenshot of the e-gift card, can the CM scan that when I make a purchase or want to pay down my resort account? Or will I need the paper printout of the GC? I do have a physical GC that I could transfer to via the website but hoped to skip that step.
No, no, these are my existing cards that were already stored in the site. The ones I've been using for years that I want to load the balances onto. Other people upthread were reporting the same issue. Sorry for confusion!
Until I verify that there's something on the cards, which I can't do with the stupid DGC website acting idiotic, I'm hanging on the activation receipts that came with all the cards. When you had an issue, did you have activation receipts that shipped with them? I don't remember these before so maybe they learned their lesson.
I think I did but it's all a blur. I think I had to make about a dozen calls and each time BJs gave me a different answer on how they would fix the problem.

It shows up under my Shopping Trips but without the amount of the order I placed. I'm not sure what I did wrong. 
I opened up an inquiry into the issue, hopefully it gets credited. Did anyone else order a DGC that day and if so, have you received your cash back?

Just an update - I went in and filed a query for my Missing Shopping trips with Rakuten yesterday AM. All I had to do was copy and paste the email confirmation of the order from Sam's and they credited my cash back to my account that evening.
