universal newbie - give me some hints

I'll be staying at Universal for the first time in at least a dozen trips to Orlando and feel at a loss for what I can plan for my wife and I to do for the weekend. I'll be here a few days before she arrives so I will take in IOA and UO, but when she arrives we'll want to do some fun things together outside of the parks.

Give me some suggestions on your favorite things to do without the kids.
