I am looking to book my flights soon for my upcoming June trip. I know that Magical Express picks you up 3 hours early to get to the airport but how early do I need to get to MCO for a return flight via Uber/Lift? For reference I'm looking at an early AM flight at 7:25 am.

Personally I would get to MCO 2 hours before the flight. Although your flight is pretty early, security there can get backed up. You could always look up current TSA wait times at MCO. Google it.

If you need to check luggage you're still looking at wanting to arrive at the airport 2 hours prior. I'd probably leave the hotel around 2hrs40mins prior via uber but at that point I'd probably just stick with using Magical Express while its still an option.

Personally, we leave WDW 2 hours prior to our flight departure. But I'm an experienced traveler used to minimizing time sitting around an airport waiting, we curbside check luggage (when applicable), have TSA Pre-Check/Clear, and am very comfortable with that timeline. Others (such as the prior posters) will want to play it safer and that is good advice. It somewhat depends on your travel style and comfort level.

Edit to add, note that I mean in the car and rolling 2 hours pre flight. That means calling ride share and being ready in advance of that. Not much room to be messing around if you do cut it close.

I have travel experience and know how unpredictable MCO can be.
Its great that you have TSA pre check and that helps with the unpredictability hence understandable that you wouldn't give yourself as long.
Its always sound advice to give yourself a cushion though. I'd rather that than something unexpected preventing me from making my flight.

But its up to you as to how comfortable you feel about taking Uber to get to the airport and not having a lot of time if issues should arise. Such as the driver arriving late or possibility having a flat tire with no time to spare to change the tire and get you to the airport in time. Or encountering an accident or traffic issues on the way there verses being picked up 3 hrs before your flight. Since its best to get to the airport at least 2hrs before your flight and it is a 30 -35 minute drive to the airport so you really are only saving yourself about 30 minutes by taking an Uber.

Does Uber drop you off at your airline or does it have a designated drop off area? Debating whether to take ME or Uber to MCO. Got letter from ME with a departure time of 11:45 am. My flight is at 3:10. I’m thinking of maybe ordering an Uber at 12:15 and expecting them to pick us up by 12:15-12:30...
