I just realized that we still have dining credits left...
I switched our plans. Completely.
We will do MK instead of Epcot that day. Brunch at Narcosees at 11:30 am and dinner at California Grill at 07:30 (fireworks starting 8pm).
On the next day we will do Epcot and I found a reservation for 7 pm at Yachtsman Steakhouse so that we will have enough time to eat and look for a acceptable viewing point for Illuminations.

You will need to eat lunch on your Epcot day - what about a fun meal around 12pm? San Angel or Spice Road? Even Chefs?
What is your plan on your arrival night?
Maybe go to Hoop Dee Do Revue? That is a fun way to use 2 credits?
Where are you staying?
Flying Fish is another great 2 credit, as id Jiko. Both in resort areas so good choices for the first night.
We are staying at the Polynesian
I found a reservation for Garden Grill at 11:30 am for our Epcot day, so there is enough time between this and Yachtsman in the evening. But we do not plan to eat tons of food at Garden Grill
I first thought I should make a reservation for brunch at California Grill, but the brunch is only on Sundays.
We have one dining credit left now, we will use it on our arrival evening. We touch down at MCO around 6 pm after a flight from Germany. After customs, getting our rental car and driving to the Polynesian I think it should be 8 pm the earliest. That is 2 am our time then. So we may use it at Captain Cooks when we are hungry. Otherwise we will find some counter service in between.

It was the best service I got at a Disney Signature (also been to Jiko, Hollywood Brown Derby and Cinderella's Royal Table) but eating here made me feel so FOMO about all the delectable treats around World Showcase for Food & Wine. If I were you, I'd graze around food and wine fest then head out to Yachtsman at 6:15 for my reservation. That's just me.I had a reservation for Kona Café breakfast at check-out day first, but I wanted to try something new so I changed it to the first seating in the morning for Boma. I hope Boma is as good as all the reviews for it...we are leaving before noon, so no more possibilities for lunch or dinner that day.
I had to convince my friend for ages to try out Disney World during our vacation, that is why we only stay three nights.
I double-checked our credit amount and theres only one credit left for each person.
I think that three credits are so many daily credits with Deluxe Dining. If we would arrive some hours earlier we could easily fit in an early dinner. We wanted to try at least two signatures, that is why we choose Deluxe Dining. And after I chose the Brunch at Narcoosees I realized that we are almost at the break even point. With Boma, Garden Grill and all those snack credits we will save a lot of $$$ with Deluxe Dining, even when we have one credit left and use it for a cheap counter service option
Well, then it is six hours. And that is only if you are seated right away and start eating right away.Your reservation might be 11:30 or 12:00, but you won't be done eating until 1:00 or 1:30. With a 7 or 7:30 dinner, you are not seven hours between meals.
