Two questions about modifying existing reservations

Just trying to learn all this before my 7 month window gets here -

1. If I want to book 8 nights can I do it all at once on the 7 month mark or would I have to call back and add the 8 th night? And would I be able to call back the next day or would I have to wait and call 7 months from that 8th night that I want? ( I'd be adding to the original7 month res. at the same resort)

2. Once I have my reservation, I may need to drop a night from the beginning of the reservation ( once we get the school calendar for next year). I've never modified a reservation on the check-in end, only dropped or added days on the check-out end. Any difference? Since I'm hoping for hard-to-get Epcot resorts during F&W I do not want to have to cancel and rebook for fear I'd get shut out. That's why I want to make it all now and drop a day later on if necessary. Does my strategy make sense?
And I'm going to also be making dining ADRs at the 180 day mark but I probably can't modify my resort res. until after that -- would there be any effect on my ADRs? I'd be well within the new 180 day window.

You could wait one day and then book all 8 nights at once. If you book the first 7 nights, you should be able to extend by one night the next day.

Dropping days at the beginning is no different. MS can simply modify the arrival date.
