Cold "Smoked" Niman Ranch Lamb with Fuji Apple and Curry Dressing

This dish was just incredible.
They brought the dish out and poured a liquid over it and it "smoked".
Dry ice was under the dish with the holes. And NUTS I can't remember what the liquid was.:rolleyes1
It infused what was on the top which was the lamb.

WOW!!!!!!!
What a presentation. My pictures don't do it justice.
And it was slap your mama good.
So was the wine. I keep saying perfect but I can't help it, it was.

At this point DH and I realized just how special our night would be.:santa::love:
And it only got better.

More later.

It was beyond amazing.
Really a once in a lifetime event.
Now I wish I had taken more pictures but I really just wasn't thinking to do that. :rolleyes: I was in the moment.:)

OK I screwed up and didn't take Isreal Perez cooking this magnificent dish table side. NUTS again.:mad:
The presentation was awesome. So I guess taking pictures was not on my mind. Just enjoying it.:)
It of course was delicious.
DH was really surprised how it tasted. As he put it "Not fishy at all and so fresh". :laughing:

You can see the salmon. I think those are grapes. The sauce was "Divine".
Well that was about as helpful as a turd in a punchbowl wasn't it?

It was all good.
Trust me.

And the wine perfect again. Wish I had a glass of that right now.:3dglasses




Speaking of wine. We had now consumed our fair share of the grape and felt just capitol. I guess this means were winos. Cause we drank A LOT of wine that night.

The pink thing you saw was a salt cellar full of different salts for the croûton presentation. It was cool huh?:)
They cooked the salmon on a heated salt rock and that was so neat.

Citricos is my favorite signature, I love it there! I saw they added that seafood escabeche and I soo want to try it!

This was no just old chicken dish. This was incredible!

The crunchy skin that was on top was just delicious with a bite of chicken. And the mushrooms and truffles were prepared so well. And that sauce.....Oy Vey! :worship:The whole dish really showed the chef's chops. Simple yet so elegant.
We both really enjoyed this and of course the wine was a great match.:):)
 
FIFTH COURSE

Minnesota Elk Tenderloin with Braised Red Cabbage Tart

Meat lovers rejoice. This was the best. Tender, well cooked, Elk. Served with a cabbage tart? Yes!!!! :love: Of course the sauce was delicious and I think that was a mustard sauce too.( :headache: Memory)

And the wine? My 2nd favorite of the night. Went so well with this dish. God it was good.

The service...Excelant! DH had to go to the restroom and they took him there. He whispered to me it was very nice.:rotfl:We were now making friends with our table mates to the left. Wine always makes everybody friendly doesn't it? They/us were oohing and awing. What fun we were having.
 
SIXTH COURSE

Australian Kobe Beef with Garlic Potato Puree

Wine Paring: Silver Oak Cabernet Sauvignon, Alexander Valley, 2005

This might have been DHs favorite, I think.:rolleyes1 He loves Kobe and last time we were at V&A he ordered this extra. So yeah it was good.
Fork tender and perfectly cooked. The potato was very creamy and the veg was delish.
I felt like a judge on "Top Chef". "What a superfluous dish".:laughing:

This was my favorite wine of the night. I love Cabernet Sauvignon and this didn't disappoint.
