Been trying new places over the past month or so, found two new ones I thought were worth mentioning:
Paris Express: does not look like much from the outside--it's in the back of the Champions Gate Publix strip mall. But a very cool space inside, and delicious French food made from scratch by an actual French chef. I've had breakfast and lunch here, I saw they are doing dinner here on the weekends now, too. To give you an idea of the quality, the OJ is squeezed to order! Had some delicious sandwiches here, and some amazing pancakes. If you're west of WDW, and especially if you're staying in Champions Gate, worth a visit.
Fat Fish Blue: A cajun restaurant upstairs in Pointe Orlando, by the comedy club. My friend's band had a gig here, so I didn't know what I was getting into, but came away very impressed. I had the cajun sampler (gumbo, jambalaya, red beans and rice), it was amazing. I loved the corn bread as well, probably the best I've had. A fun space, as well--they wrap the silverware in Mardi Gras beads, and the whole restaurant has a cool vibe. A great choice if you're on I-Drive.

Will keep in mind for next time though.
