Two days in the world...

So we have a trip planned for 5/22 - 5/25 this year. I'm more than a little nervous. We usually vacation with our kids the last week of January each year. This will be an adult only trip for DH and I and while I salivate at the opportunities we will have to catch shows, look into all the Epcot pavillions and get to partake of so many delicious adult beverages, I'm having a hard time planning. Crowd levels are estimated to be a 8/10 and we're used to more of a 3/10. We will only have two day PH because our first and last days are travel days. We're staying at the Boardwalk. How would you spend two days? Pick just two parks? Park hop early or late? I'd love to snag a ride or two on ToT, RnR, and TSMM but I know with SWW in full swing crowds there will be monstrous. I'd like to hit all the parks but I just dont know if its feasable. :( Help, DISers!
 
Since you only have two days in the parks that's a tough one. I would plan to park hop at least one day since HS and AK aren't full day parks for me. I could also split MK and Epcot, doing MK in the morning since World Showcase doesn't open until 11 anyway. If you made rope drop it's possible you could ride what you wanted at MK without fast pass. Personally Epcot and HS are my favorite parks so if I had to pick I'd do those two but I really thing park hoppers are going to be the way to go.
 
How important are the rides? Sounds like you and DH don't get to do Disney by yourselves so I'd be tempted to do the more adult version of the trip. Pick a park for each morning. Relax in the afternoon and do a nice lounge in the evening, stroll through EPCOT one evening....along those lines. Take advantage of the time just the two of you :teeth:
 
If you didn't mind a fully packed vacation. I would - as your staying at the Boardwalk, spend one day at Hollywood Studios in the morning (get FP+ for ToT, RnR, and TSMM), then get a friendship boat from the studios to Epcot (via Boardwalk - freshin' up at your resort on the way if need be), then try to get any rides you could at Epcot - stay for illuminations whilst visiting the countries around World Showcase. Day two I would book FP+ for Magic Kingdom in the morning, get the monorail to the TTC during the early afternoon & get a bus to Animal Kingdom for the rest of the day. We always go in May & it isn't too crowded in the other parks during SWW (just remember to get your FP's booked for as early as possible as most families arrive at the parks a little bit later).
 

Rule #1 of a WDW vacation: You can't do everything. And it is foolish to try.
And for a 2 day vacation, you reeeeaaaaallly can't do everything, and it would be nuts to try.

Prioritize. What is more important to you; hopping around trying to do a bunch of headliners, or enjoying a different pace than what you are used to with shows, strolls and beverages? If I were you, I would pick one theme and stick to it. Trying to merge the two on days with 8-level crowds could cause you to fail in both endeavors. If it were me, I would take the more casual approach and see how much fun you can have relaxing while watching 75,000 other people go nuts, thinking to yourself: "Boy am I glad that that is not me!" If you do try to merge the two approaches, I would opt to RD a park in the morning, lining up my FPs for mid-morning through early afternoon, and then head over to Epcot to relax, pavilion-ize and imbibe. Maybe do DHS on morning and either MK or Future World the other. Put yourself on a strict time schedule and don't overdo it. If the goal is to see what WDW can be like without kids, doing stuff that you don't ordinarily do, then make sure that you leave yourself enough time to do that.
 
Thanks for all the replies already! I'm torn as to what I really want to do...I fell in love with ToT last trip as I'd never been brave enough to ride so I'd like to do that again for sure, TSMM is always fun and I always thought it would be a blast to ride with DH and compete for high score too. I'm leaning more towards a relaxing trip as we're hardly EVER without kids, and NEVER without them at Disney. I know one night we're eating Cali Grill and then Rose and Crown on Sunday. Thinking about possibly missing out on AK this trip and spending just a few hours in DHS to catch those rides. Maybe hit MK at RD our first day, ride a few rides, snag a dole whip, and then other than those things, spend a lot of time at Epcot. Its our favorite park and I'm really looking forward to checking out the pavillions and possibly doing an abbreviated Drinking around the World adventure ;) I'd never be foolish enough to try and shove it all in two days time but I want to hit my favorites if I can :)

As a side note, does anyone have any food recommendations upon our arrival? We get in late and obviously wont be hitting a park and using up a ticket. I think we may try and hit Jellyrolls after we check in but I know we'll be hungry! What's open in the Boardwalk area around 11pm?
