Tusker House timing for breakfast and lunch buffet?

Is there a sweet spot for timing where you end up getting items for both meals? I can't decide between the two, and I know the timing works at some Disney buffets where you can end up seeing both meals.

Yes...we often book 11:00 or 11:15 and start with breakfast and then move on to lunch items.

We usually book a 10:45 am ADR if we're looking to eat food from both the breakfast and lunch buffets. It's worked like a charm 11 times now!

1) They do the switch-over starting at 11:00am.
. . . the breakfast left-overs are placed in the center of the food room
. . . the lunch items replace them on the buffet tables
2) Sometimes, they start the change as early as 10:45am, if there is a long list of ADR's for lunch.
3) At switch-over, any breakfast food exhausted is not replaced.
4) Now, The Problem.
. . . Tusker can be running on-time or behind-time on ADR's
. . . on busy days or on days when lots of people book closer to 10:30am, breakfast seating can be 20-30 minutes behind schedule
. . . if you book a 10:30am ADR and are seated quickly, you might have to much food to have room to eat anything from lunch.
. . . if you book 10:45 and have to wait to be seated, you might not be seated in time to have any breakfast items.

We've done 10:45 or 10:50 on 3 different occasions and have always been able to enjoy the best of both worlds
