I've used a herb blend (Slyvia's) with some olive oil for a turkey rub. I've peeled and cut oranges and apples and stuffed the turkey with that while it cooks. And last year I cooked it upside down (!). I read somewhere, that it helps to keep the turkey really moist. It worked. Well either that worked or the fruit. It didn't hurt but it did look pretty funny cooking upside down.
