Trying to figure out how to book rooms

Ok, so I am really excited we received a pin for free dining for late fall. The only problem is there are 12 people traveling, which will fit in 3 rooms, but we want the extra space. We hope to stay at the POP. So we would prefer 5 total rooms and I can only book 3 on the pin offer. Can we each book an extra room at room only rates? How does that work?

Also, we are annual pass holders, so can we transfer/sell the 2 day ticket when we get home? I know we could apply it later, but we are trying to make this trip as budget friendly as possible.
