Are there better "day configurations" to stay at Disney for the best rates? Ex. Saturday to Saturday. Tuesday to Tuesday
And are there a certain amount of days/nights to stay for the best rates? 5,6,7?
 
At most resorts Friday and Saturday nights are priced a little higher. This is pretty standard in the hotel industry.

As far as length of stay, it really depends on what you want to do and how your park touring style is. Most people stay a week, some stay less, some stay longer. Really it's personal preference and how much you want to do during your vacation. You can certainly cover all four parks in 5 days, but you'd have no downtime, shopping time, pooltime, etc. and can tire even the most avid parkgoer out.

For WDW the big factor affecting resort pricing is the travel season. Disney has many, ranging from a few levels of "value season" at off times of year to very high holiday season pricing. If your vacation falls near a seasonal change in resort pricing (as well as Dining Plan seasonal price changes), moving your dates to fall into the lower of the two prices can really effect your total vacation cost. Traveling during an off time can increase the odds of other discounts and promotional offers too.
