I think the least expensive option would be to rent a car for one day, (you can rent from Alamo or National at the airport and then drop it at the Swan/Dolphin, or TTC on Disney property. Make a Wal-Mart run and get what you need. Tents can be had for less than $100 that would last through your trip. Pack what you can within your luggage allowance, of things that you can bring with you, then purchase the rest and be prepared to give away or dispose. go disposable with paper plates, silverware, etc. For cooking utensils, get those cheap aluminum disposable baking dishes, and lots of aluminum foil. (Hobo meals, etc.). Cooling perishables will be your hardest challenge. Ice is expensive at the Fort, and coolers that keep the cold are expensive. Perhaps consider meals that don't need refridgeration. Soups, oatmeal, breakfast bars, tuna lunches, there are some decent box dinners that include meat. Might be possible to adapt those to cooking over charcoal.
