So on our switch day from CCV to Poly, we plan to go to Epcot's World Showcase and maybe DHS afterwards. Right now, we are leaning toward purchasing a 1-day ticket to go to Epcot's F&W Festival for lunch and to ride Remy, and then if it looks like we will have time, maybe upgrading to a PH and going into DHS for MMRR and TSM. Afterwards, we will head to the Poly. What would be the best way to accomplish this? We will have a car.

Move your car over to the Poly in the morning, and take Disney transportation for the remainder of the day. That’s truly the best way to go about it.
Exactly, because you can walk to the left from the front GCH entrance along the sidewalk past PagoPago and onto the path to the TTC. Roughly a 10 to 15-minute walk to the TTC.

So after moving the car, walk to TTC, monorail to Epcot and then if we do go to DHS (by walking, boat, or skyliner), take a bus back to Poly. Would this be best?

That'll work nicely.

Personally, we enjoy the boats so much, we'd take the boat over to DHS. Relaxing, and you get a nice breeze if you sit on the deck bench rather than inside the cabin.

One more question--
When we move the car over to the Poly that morning, we plan to eat breakfast at Captain Cook's before heading to Epcot. It makes sense to park in front of the Great Ceremonial Hall. But when we leave, would it make sense to move our car over to the Pago Pago parking lot to be closer to the TTC and to make it easier to get our luggage when we return?

So some plans have changed. We are now going to add AK into the mix. Here is the day now:
Epcot 10:00 until 2:00 or 3:00 (starting later just to do Remy and F&W which doesn't start until 11:00)
AK until 7:00 (popping in for the safari and Y&Y)
DHS until 9:00 (popping in for TSM and maybe MMRR; I know I can get in line for a ride right at closing.)

With this tight of schedule, would it be best to drive our car instead? Disney transportation takes forever! I'm also wondering if the parking lots will be pretty empty at AK and DHS by the time we arrive. I know Epcot will be bad just because of the time we are arriving.

Would it be better to monorail to Epcot instead of driving, then monorail back to TTC, walk to Poly, then drive to AK and DHS?

ETA: I'm reading that the monorail takes 15 minutes from TTC to Epcot. That makes me think it's better to use the monorail that morning since it will set us out much closer to the gates than if we drive our car. So if we do the monorail, would it be better to park our car at TTC instead of Poly that morning? Not sure if it would be closer to walk from the monorail to where our car is parked at TTC or from the monorail to where our car is parked at the Poly. Looking at Google Earth, I think it would be wisest to park our car in front of Pago Pago at the Poly and walk to it before heading to AK and then DHS. Does this sound like the best plan?

ETA: Ok, so we just can't decide on a plan. Now we are thinking after we go to Epcot it would make sense to go to DHS first (since it's so close) and then AK. I'm just wanting to do TSM and the Safari as this is our last trip for a while and these are my favorites. What makes me nervous though is that the calendar is showing Safari closing at 5:30 that day. If we took the boat to DHS around 2:30 and rode TSM, what would be the best way to get to AK before the Safari closes?
