Can an adult's park hopper plus pass be traded in (and pay the differece) for a child's annual pass? No days have been used on the adult's pass yet. Thanks in advance!

You can use the two remaining park days towards the AP. You cannot keep the unused plus options. They will be forfeited when you do the upgrade.
Also, If she will be 9 when we activate the AP, but turn 10 before our 2nd trip, are we ok, or do we need to trade in for an adult AP? ...
The age of the child when activating the AP is the deciding factor. If she is 9 when you activate the AP (or buy it at WDW), then that child AP will be good for the entire year. She will not have to exchange it for an adult AP after she turns 10. She can and should continue to use it all year. Then if you renew the AP next year, she would have to get the adult one.
