We stayed there about 5 years ago and it was lovely. We had a room with a gulf balcony and it was beautiful - woke up to gorgeous views of the water every morning. Not sure about the "apartment" part - if it was the same type we had, it had 2 queen beds, a kitchenette with fridge, coffeemaker and as I remember a microwave.
The waterway around the hotel was also nice - you could get a mini gondola ride.
The piano bar was good (although it was pretty deserted when we went (over xmas) and it closed early most nights).
The restaurant was nice but pricey and we ate at a family run restaurant just down the road which had the most delicious Key Lime Pie!
There was a great mini golf course across the road (Pirate's Cove I think

) which if it's still there will amuse your kids.
Not sure about room requests, sorry.
Also, don't know whether you've been to St. Petes before, but I would definitely recommend visiting Tarpon Springs which is nearby (it's such a quaint town and it is the sponge capital of the world!) Definitely try Dunedin too - there's a cafe there part of the best western hotel where you can sit on the jetty, eat gorgeous ice cream and watch the dolphins (they come extremely close!)
