Touring with two days at MK

We plan on spending two days in MK on our upcoming Disney trip, and I was wondering how you guys go about touring with two days? Do you like to split it up into sections for each day? (this is what we are doing for epcot this year) Or do you do every must do attraction the first day then more leisurely the next? Just curious as to what works best for different families! We will have a 6 and 4 year old, and are going in September (labor day week). We plan on taking afternoon breaks back at the hotel (staying at the polynesian).
 
We split the most popular attractioms between the two days knowing there are some things we want to do more than once. We would likely FP Mine Train both days, then one day also FP+ splash and Thunder while the other FP+ Anna & Elsa and Cinderella & Rapunzel.

One of the days we would hit at rope drop and likely meet merida and do other things that get popular but don't have FP+, then the other day we would arrive later and stay for Wishes and MSEP.
 
We tend to do Tomorrowland and Fantasyland on our first day and Adventureland, Frontierland, and Liberty Square on our second day. Not saying there's zero overlap, but it works well enough for us.

This is what my plan is, especially when trying to book FP. There are a LOT of rides in Tomorrowland and Fantasyland.
 

We just end up covering the whole park both days. Going in September with lower crowds helps to make that possible. If we miss a big ride or two the first day, we catch it the next.

We usually do our favorite attractions both days and then split up the things we only do once (including character meet and greets). Some favorites include Pirates of the Carribean, Wishes, MSEP, Little Mermaid ride, Buzz (we will do this multiple times!), Philharmagic. We always spend 2, sometimes 3, days in MK. It's our favorite park. We eat at CRT, CP, BOG (lunch and dinner). LOL
