Well, in our house we have GameCube with the screen, Playstation I, Playstation II, Black and White Gameboy, Gameboy, Gameboy SP, and even the old Atari system, Ninetendo and Super Nintendo.
I think your choice is going to depend on price and what you want from the system. I absolutely love our Playstation II for long trips because it also functions as a DVD player. We also leave this unit in our camper during camping season. We have the Gamecube with the portable screen so that makes it the easiest "full" system to carry. The Gameboy SP is definitely the most portable with how small it is and the bags you can purchase for them. I would second that the Xbox is more for the older kids. Although you will want to look at game choices available for the system you are considering purchasing to make sure there is enough of a choice.
There are a lot of places you can purchase used units with a warranty. I haven't purchased any systems this way, but I have purchased games from time to time.
