Total Newbie Photoshop ?

I just got Photoshop CS3 10.0, Can I take a blank say Mickey head and insert the name I choose? Can I also take one that has a name and change it to another name?

I am trying to learn so I don 't have to bother anyone for the names I need.
I have no idea what I am doing here so any help would be appreciated.
