I'm trying to decide where we should go and what we should skip.

These are what I would suggest for a nice variety. All are in my favorites for what they are.

1. Chef Mickey's
2. Spoodles
3. Chef's De France or Biergarten
4. Boma
5. California Grill.

I've got a character meal in there, mediteranean at Spoodles on the boardwalk. They have Pasta's steak, and a seafood stew that's wonderful.
This is my favorite place on the property. Then there's German or French at the international area in Epcot. Flavors of Africa near the animal Kingdome, and then a signiture meal at the California Grill. Try to get your ressies about an hour and a half to 2 hours before Wishes.

Some counters to try.
MK Cosmic Ray's (chicken and ribs) They also have Burgers and stuff, but try the chicken and ribs.
AK. Flame Tree BBQ. Ribs. Tusker House Salmon and chicken.
MGM. I haven't had all that good of an experience here. I haven't tried the new flatbread cafe yet, so why don't you try that one.
Epcot. Tangeriene Cafe (Morocco)
 
Glad to see so many recommendations of Artist Point. We have reservations there, Biergarten, and Chef Mickey's so far.
I'm thinking of making the last 2 for Sci Fi Diner and Coral Reef (my husband is really into fish and aquariums so he wants to go there).
